Get to Know Our Team, Part 1: Kitchen

Hi EDA friends and family! 

For this week’s blog post, we wanted to bring you inside our kitchen and give a shout out to some of our most valued team members: our kitchen staff! As a restaurant, it’s vital to have a team in the kitchen who works well together, are talented at what they do, and are good people. 

We lucked out because our kitchen crew is the best around! We couldn’t survive without them. In an effort to get to know them better, they’ve answered a few questions for us! Read on and next time you order your favorite EDA meal, know that it was prepared with love by these gentlemen.

What is your role at EDA? 

My role at EDA is kitchen cook.

What do you enjoy about working in the kitchen?

The main task I enjoy doing in the kitchen is making sure the kitchen is clean and ready for line cook. I thank God that working in the kitchen has permitted me to taste and learn a lot about so many different foods. I love my job.

 

What do you enjoy doing outside of work?

Outside of work I love to dance.

 

What kind of food did you grow up eating?

Growing up I ate a lot of pupusas (cornmeal flatbread filled with chicken), a typical national dish of El Salvador. 

 

 What are your favorite kinds of food to make now?

I love preparing American food, and pasta. 

 

What EDA menu item do you recommend, or your favorite to make?

From the EDA menu, I highly recommend the short ribs I help prepare.  

 

What got you into cooking?

I love trying different types of food, and learning how to make it. 

 

What are your favorite kinds of food to eat?

My favorite foods to eat are shrimp and lobster.

 

What's your "desert island" meal? 

My desert island food is “7 Seas Soup, Caldo de Siete Mares. It’s made with the best seafood: white fish, shrimp, baby octopus, squid, mussels, and crab.  

 

What’s your favorite band? Favorite song?

My favorite band is ‘Tigeres del Norte’, and my favorite song is “Vivir Un Dia a La Vez.”

What is your role at EDA?

I’m one of the cooks here. 

 

What do you enjoy doing outside of work?

I love watching futbol and football.

 

What kind of food did you grow up eating, and what are your favorite kinds of food to make now?

I’m from Mexico City, so I grew up eating tacos, enchiladas, etc. I still love making those foods now -- anything with enough salsa.

 

What EDA menu item do you recommend, or your favorite item to prepare?

The Roasted Turkey Club and our Italian Baguette sandwich.

 

What got you into cooking?

At first, I just needed a job. But with time, I grew to love how you can “talk” to people without even seeing them, through food. 

 

What's your favorite item to eat?

Salsas, or dressings. 

 

What's your "desert island" meal? 

Breaded steak, mashed potatoes, and flan.

 

What’s your favorite band? Favorite song?

Everything by Metallica.
